Recipes


Praline Charlottes
1.5 cu melted butter
1.5 cu brown sugar
2 t vanilla
2 t baking soda
1 t baking powder
1 t salt
1.5 cu finely ground pecans
2 beaten eggs
3 cu flour

Preheat to 350. Cream butter, sugar, vanilla. Add soda, powder, salt, pecans, eggs, mix after each addition. Work in flour. Chill. Roll in walnut sized balls, add criss cross fork pattern, bake 8-10 minutes. Cool, Frost

Frosting
3/4 cu butter
3.5 cu powdered sugar
2 t vanilla*
1/3 cu cream
1/2 cu finely chopped pecans
pecan halves for decoration
Cream, and spread on cookies. Let dry hour before putting into cookie jar.

Yield 8 dozen

* can be replaced with 1.5 t vanilla and 1/2 t of maple extract.


Mystery Cookies
1/2 cu melted butter
3.5 cu sugar
2 beaten eggs
1 can condensed tomato soup
2 t cinnamon
2 t nutmeg
2 t baking soda
2 t salt
2 cu raisins
2 cu chopped walnuts
4.5 cu flour

Preheat to 350. Cream butter and sugar. Add eggs, soup, spices, soda, salt, raisins, walnuts. Mix after each addition. Work in flour. Let rest. Bake 1 t on greased sheet y 10-12 minutes.

Yield 10 doz


Pineapple cookie Bars
Crust
2 cu flour
1 cu room temp butter
1/2 cu sugar
Topping
4 beaten eggs
1/2 cu sugar
1/2 cu frozen concentrated pineapple juice
1/2 cu drained crushed pineapple
1/2 t salt
1 t baking powder
1/4 cu flour.

Crust
Cut butter into flour/sugar mix. Press down into bottom of 9*13 pan. Bake 15-20 minutes
Topping
Mix eggs, sugar, and pineapples. Add salt, baking powder and salt (it will be runny) Pour on top of baked crust, bake 45-50 minutes. Cool and sift powdered sugar on top, serve.
