I wonder if anybody would know this

Fall is soon, my zucchini plant and tomato plant are still going strong, but the corn that was planted between them died long ago. So I've got some space to play with. Are there any good winter crops that are tolerant to indifferent and novice gardeners? Are there crops that would help the soil gain back what the tomatoes and zukes took out?

I'm in western Oregon and I've planted kale and something called Mixed Winter Greens (chard, kale, dandelion greens, broccoli raab, collards and beet greens). There are other things I COULD have planted, but I was late getting my winter garden in and had to rely on starts.
