Fall is soon, my zucchini plant and tomato plant are still going strong, but the corn that was planted between them died long ago. So I've got some space to play with. Are there any good winter crops that are tolerant to indifferent and novice gardeners? Are there crops that would help the soil gain back what the tomatoes and zukes took out?

From a sixth grade study project, I happen to remember that George Washington Carver found that peanuts and soybeans replenished soil which had been depleted of nitrogen and other nutrients.

I thought corn would also do it, but Wikipedia says "maize".

Food crop or cover crop? Berseem clover is a cover crop that can be sown in the fall. It will fix nitrogen in the soil.

You would have to check with a nursery to see what food crops can overwinter where you are. I'm in western Oregon and I've planted kale and something called Mixed Winter Greens (chard, kale, dandelion greens, broccoli raab, collards and beet greens). There are other things I COULD have planted, but I was late getting my winter garden in and had to rely on starts.
