I wonder if anybody would know this

Fall is soon, my zucchini plant and tomato plant are still going strong, but the corn that was planted between them died long ago. So I've got some space to play with. Are there any good winter crops that are tolerant to indifferent and novice gardeners? Are there crops that would help the soil gain back what the tomatoes and zukes took out?
