My Freezer in the garage is full! I don't think I could even fit in a kleenex, its so stuffed. I got a 1/4 of a steer and a 1/4 of a hog. I got 3 things I don't know what to do with
  • pig trotter
  • skin-on pork belly bacon (I bet [livejournal.com profile] allanh 's husband Randy can think of something to do with this!)
  • beef tounge

I'll figure something out with the pig bits...I'm not so sure about the tounge...I object to eating something that can taste me back. I've never had it before...might be time to try something new.

Boil the tongue in salted water for a while. Slice down the outside and peel off the outer layer... that gets rid of the taste buds, etc. After that, it's a par-boiled beef roast since it's a big muscle.

Beef tongue makes great tacos (linguitas) and isn't bad bbqed.
